If you have never tasted a tandoori dish, which is a signature food of India, then you are missing out on something spectacular. This unique spice rub is straight out of Bombay for seasoning chicken, curries, shrimp, rice and beans – you name it! It works well at high temperatures, so you can use it for either grilling or barbequing. You can make chicken kabobs using pieces of chicken in some of the rubs and add a little salt and pepper and grill away. Serve the chicken with rice, naan or pita bread, and either riata or chutneys. Tomato and apple chutney goes well too!

Ingredients: Anaheim chili, fleur de sel, paprika powder, coriander, cumin, garlic, black pepper, methi leaves, celery seed, fenugreek, bay eave, green cardamom

 

Use: It works well at high temperatures, so you can use it for either grilling or barbequing. Use as a dry Rub and let the meat rest for 12 h before grilling. Or make a marinade with the blend and yogurt. Marinate the meat for 12 h before preparing, then grill or roast in the oven or cook as a stew with vegetables. Serve with rice and naan bread.
